Stacy shares how transitioning her family to a whole food, plant-based lifestyle helped simplify mealtime without sacrificing flavor. Start with what they already like and keep it accessible.

Even when life gets hectic (which it often does!), Stacy leans on grab-and-go staples like seasonal fruit, popcorn, and homemade juices. And when eating out is the only option, she models realistic flexibility, encouraging thoughtful choices without being rigid.

Meal Prep, Not Perfection

Rather than chasing a perfect diet, Stacy embraces small, sustainable practices. She and her granddaughter prep meals together, building salads and veggie patties from scratch. “You don’t need dressing when your salad is full of flavor,” she says.

She’s also intentional about not being the “food police.” Instead, she creates an environment where healthy food is the norm, while giving her family space to make their own decisions. Over time, those seeds take root. Her husband recently echoed her healthy-living mantras without even realizing it.

Grace Over Guilt

Perhaps the most powerful message Stacy shares is about mindset. For moms juggling careers, homes, and children, it’s easy to fall into guilt when life or dinner doesn’t go as planned. But as Stacy reminds us, “You can start over at your next meal.”

Rather than beating ourselves up, she encourages moms to give themselves grace. “When you’re doing the best you can, with what you have, and doing it in love, that’s enough.”
